Blueberry Protein Waffles

Start your day with these waffles that pack a protein boost! We use a combination of all-purpose and whole wheat flour for flavor and texture and a few scoops of our Pure Peanut Protein Powder to supply plant-based energy. Adding blueberries to the batter and using them as a topping ensures you’ll get a delicious dose of brain-protecting and immune-boosting antioxidants.

Here’s Why They’re Great

- Easy extras. Don’t stop at one batch! Double or triple the recipe then cool completely and freeze any leftovers. Stocking your freezer with waffles means a nourishing breakfast is never far away.
- Multi-purpose. Yes, waffles are great for breakfast, but they’re also delicious for lunch, dinner or even a snack. Top them with your favorite nut or seed butter for an easy handheld afternoon pick me up. Or leave out the blueberries and sugar and make them a savory base for a fried egg!
Ingredients
- 1 cup (120g) all-purpose flour
- 3/4 cup (85g) whole wheat flour

¼ cup Pure Peanut Protein Powder
- ¾ teaspoon salt
- 1 tablespoon baking powder
- 2 tablespoons granulated sugar
- 1 ½ cups 2% milk (or plain plant-based milk)
- 1 large egg
- ⅓ cup melted butter or vegetable oil
- 1 pint fresh blueberries, divided
- Maple syrup, for serving
Directions
- Whisk the all-purpose flour, whole wheat flour, protein powder, salt, baking powder and sugar in a large mixing bowl. In a separate bowl, whisk the milk, egg and butter together. Pour the wet mixture into the dry and fold until just combined. Stir in half of the blueberries.
- Preheat a waffle iron to high heat. Use a pastry brush to lightly coat the hot plates with vegetable oil. Add the batter and cook until golden-brown and crisp. Repeat with remaining batter.
- Serve with remaining blueberries and maple syrup.
