Cashew Delights Sandwich Cookies

These cashew butter sandwich cookies offer a delightful twist on a classic, replacing peanut butter with the rich, subtle sweetness of cashews. The creamy, minimal-ingredient cashew butter filling is sandwiched between two tender, slightly crisp cookies for an irresistible treat.

Ingredients
1 1/2 cups (180g) all-purpose flour
- 3/4 teaspoon baking soda
- 1 teaspoon kosher salt
- 1/2 cup (1 stick/113g) unsalted butter

3/4 cup (180g) Once Again Cashew Butter
- ¾ cup (150g) granulated sugar
- ¾ cup (160g) firmly packed light brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
- For the filling:

½ cup Once Again Cashew Butter
- 1 cup (113g) confectioners sugar
- 2 teaspoons vanilla extract
- ½ teaspoon kosher salt
- 1 to 2 tablespoons milk

Directions
Preheat the oven to 350°F and line two large baking sheets with parchment paper.
- Whisk the flour, baking soda and salt together in a medium bowl.
- In a large mixing bowl with an electric or stand mixer, beat the butter, cashew butter and sugars until light and creamy, about 3 minutes. Scrape down the sides of the bowl, then add vanilla and egg, and beat until combined.
- With the mixer on low speed, gradually add the flour mixture; beat until just combined.
- Portion dough into rounded tablespoon (roughly 1 ounce) balls and place 2 inches apart on prepared baking sheets.
- Bake cookies for 10 minutes then remove from oven. Tap tops with the back of a measuring cup to flatten slightly. Return to oven and bake until cookies are golden and edges are crisp, 4 to 5 more minutes.
- Cool on baking sheets for 2 minutes then transfer to a wire rack to cool completely.
- While cookies cool, make the filling by beating the cashew butter with the sugar, vanilla extract and salt. Thin with milk as needed.
- Assemble the Cookies: Spread a thin layer of filling over half of the cookies. Cover with another cookie to make a sandwich. Repeat with remaining filling and cookies.
Recipe Note
Tip: For a thicker sandwich, double the filling ingredients!
