Fruit & Nut Wheat Berry Salad

Ingredients
- 2 1/2 cups water
- 1/2 cup wheat berries rinsed
- 1/2 tsp salt
- 1/2 cup chopped dried apricots
- 1/2 cup dried cranberries
- 1/2 cup sliced scallions
- 1/4 cup chopped pistachios
- 1/4 cup sliced or slivered almonds
- 2 tbsp Once Again Killer Bee Honey
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh orange juice
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp salt
Directions
- Place the water, wheat berries, and salt in a pot. Bring to a boil. Reduce to a simmer. Cover and cook until the wheat berries are tender, about 1 hour. Drain.
- Place the wheat berries, apricots, cranberries, scallions, pistachios, and almonds in a bowl.
- Whisk together the honey, olive oil, juices, mustard, and salt in a separate bowl.
- Pour the dressing over the wheat berry salad and toss gently to coat.
