High Protein Banana Bread
A great snack doesn’t have to be store-bought. Some of the best snacks in fact, can be made right in your kitchen. Our banana bread is a great example of that - and it comes with a protein boost thanks to swapping in our Organic Pure Peanut Protein Powder for some of the all-purpose flour. It’s the perfect snack for after school or to beat that 4pm slump at your desk. One 9x5-inch loaf will provide 12 servings, plenty to get you through the week!

Here’s Why It’s Great (and Tips)
A little extra. Adding a ½ cup of our Organic Pure Peanut Protein Powder means this bread has more staying power than your typical banana bread. That’s an extra 44 grams of protein per loaf - about 4 grams more protein in each slice!
Double it up. Make an extra loaf if you know you’ll be feeding a hungry family or crowd. Extra slices can also be wrapped and frozen to be pulled out when snack time rolls around.
Make it whole grain. Want to add a little more fiber and protein? Replace ¾ cup of the all-purpose flour in the recipe with whole wheat flour. The bread will be a little bit more dense, but satisfyingly worth it.
Ingredients
- 1 3/4 cups (219g) all-purpose flour

1/2 cup Once Again Organic Pure Peanut Protein Powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- ½ cup (100g) vegetable oil
- 1/4 cup (53g) packed brown sugar
- 1/2 cup (100g) granulated sugar
- 3 large (about 1 ½ cups) ripe bananas
- 2 large eggs, room temperature
- ½ cup (113g) sour cream, room temperature
- 2 teaspoons pure vanilla extract
Directions
- Preheat the oven to 350 degrees F. Grease a 9x5-inch loaf pan then line with parchment paper.
- In a medium bowl, combine flour, protein powder, baking soda, cinnamon and salt
- In a separate bowl, beat oil and sugar together in the bottom of a large bowl until light and fluffy, about 2 minutes. Add the eggs and beat well. Add the bananas, sour cream and vanilla; mix well. Add the dry mixture to the banana mixture then pour into the prepared pan.
- Bake until golden brown and toothpick inserted in the center comes out clean, about 1 hour. Transfer to a rack to cool for 15 minutes then remove from pan and let cool completely before slicing.
