High Protein Crepes with Berries

Crepes are a great option for mixing things up when it comes to breakfast. Like pancakes and waffles, crepes can be topped with a variety of goodies, but they’re unique in that they can also be rolled or folded up with them too. Their thin and flexible nature makes it easy and fun to play with a variety of ingredients!

Here’s Why They’re Great (and Tips)
- Make the Batter Ahead of Time. Crepe batter can be made up to 1 day in advance. Once combined, transfer to a container with a lid and refrigerate until ready to use.
- Let the Batter Rest. This batter is best when it’s given time to rest. Aim for at least 30 minutes and up to one day of rest time. This limits the air bubbles, but also gives the gluten in the flour time to relax (preventing a rubbery texture) and absorb moisture (for a thick, smooth consistency).
- Enjoy Savory or Sweet. Looking for a savory option? It’s as easy as leaving out the sugar in the recipe below then instead of topping with berries, roll with cooked veggies, scrambled eggs or any of your favorite savory fillings.
Ingredients
- 2 large eggs
- 1 ½ cups 2% or whole milk
- ¼ teaspoon salt
- 1 cup (125g) all-purpose flour

¼ cup Once Again Pure Peanut Protein Powder
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons salted butter, melted and cooled
For Cooking & Serving
- 2 tablespoons salted butter, for cooking
- 4 cups berries of your choice
- Powdered sugar, for garnishing
For the Batter
Directions
- Add all batter ingredients in a blender, cover with a lid and blend until smooth. Transfer to a bowl or large measuring cup and let rest 30 minutes (or up to 1 day when covered and stored in the refrigerator.
- When ready to prepare, heat an 8-inch skillet over medium heat and brush with melted butter. Add ¼ cup batter, then tilt the pan to help spread the batter to cover the bottom. Cook until the bottom is lightly browned, about 1 minute. Flip and cook the other side until just set, about 10 to 20 seconds. Transfer to a plate and continue the process with the remaining butter and batter.
- Serve with berries and garnish with powdered sugar.
