Peanut Butter Banana Fudge

This isn't your grandma's dense, overly sweet fudge. We're talking about a creamy, dreamy, no-bake confection that perfectly blends the rich, nutty flavor of peanut butter with the natural sweetness of ripe bananas. It's so simple to make, you'll wonder where it's been all your life. Perfect for a quick snack, a guilt-free dessert, or anytime you need a little pick-me-up. Let's get started!

Ingredients

½ cup of Once Again Creamy Peanut Butter, room temperature
- 2 medium ripe bananas, mashed (¾ cup mashed)
- 2 tablespoons melted coconut oil
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- ⅛ teaspoon kosher or sea salt
- ¼ cup salted peanuts
- ½ cup mini chocolate chips
Directions
Spray an 8-inch square baking dish with non-stick cooking spray, then line with parchment paper.
Combine the peanut butter, banana, coconut oil and honey in a large bowl. Pour mixture into prepared pan or silicone mold and spread out in an even layer. Cover the top with salt, peanuts and chocolate chips, if desired, then freeze for 3 to 4 hours or until firm.
Remove fudge from the baking dish and cut into squares.
To maintain freshness, store in an airtight container in the refrigerator or freezer.
