Quick Cashew Oat Bars

We hope that you agree with our philosophy that you just can’t have too many granola recipes! This Quick Cashew Oat Bars is much like the others we have shared before in that it includes one of our nut butters and lots of oats. However, here is something different and perhaps what you’ve been waiting for! It is simple to follow, quick to make, uses only natural sugars, includes fiber-rich sources and can be personalized to fit your taste.

As we journey on the path to better health, recipes such as this, are helpful tools to stay on track. Remember: Granola bars can be nutritious snacks or dangerous traps. Unfortunately, many options have more simple sugars than fiber and protein combined. Of course, this is not the case with ours!

The use of a food processor is recommended but not required. You may use a high-speed blender, or in the absence of those, you can start with oat flour and use flax seed meal instead of the seeds. The nutrient value will be almost the same when you swap those two ingredients. The sweetness in the bars derives from the bananas and dates. We found that some folks tasted these bars and requested a bit sweeter taste. To achieve that, you can add a ¼ cup of honey to the recipe. Another option is to add mix-ins to get more sweetness. Try raisins, chocolate chips, dried cranberries or another dried fruit.

The use of cashew butter in this bar recipe allows the flavor of the bananas and dates to shine through. They will create the dominant flavor. Experiment by adding spices, too! A teaspoon of cinnamon and/or nutmeg can turn this bar into a gourmet treat!
