1/4 cup Once Again Tahini
- 2 cloves garlic, minced
- 1 teaspoon minced fresh ginger
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- 1 tablespoon low-sodium soy sauce
- ¼ cup water
- 1/4 cup fresh lime juice (from 2 limes)
- 1 1/4 pounds boneless skinless chicken breast
- Vegetable or canola oil, as needed for cooking
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh basil, chopped
Directions
Combine the tahini, garlic ginger, olive oil, honey, soy sauce, water and lime juice in the bottom of a large bowl. Remove and reserve ¼ cup to use as sauce for serving.
Place the chicken in a heavy duty resealable bag and using a meat mallet or rolling pin, pound to even thickness, about a 1/2 inch. Add the marinade and toss to coat. Cover and refrigerate at least 20 minutes and up to 2 hours.
Preheat the grill or set a large heavy skillet over medium high heat. If grilling, clean and lightly coat the grates with oil. If cooking on the stove, add 1 tablespoon oil to the skillet. Remove chicken from marinade, allowing excess to drip off, and add to the grill or skillet. Discard marinade. Cook flipping once halfway through cooking time, until internal temperature reaches 165°F, about 8 to 10 minutes.
Let chicken rest 10 minutes before slicing. Drizzle with reserved sauce and garnish with herbs.
