Grilled Peanut-Coconut Chicken Skewers
We love recipes that require minimal ingredients and quick prep, that’s why we lean into the type where the marinade works double-duty, like the one for these chicken skewers. Some of the marinade is reserved (before adding the chicken) and used as a sauce for serving, adding a bit of extra moisture and flavor to the dish.

Here’s Why It’s Great (and Tips)
Peanut butter for marinating. Peanut butter is a great base for this marinade. It provides flavor, but also moisture, which is great when using lean cuts like chicken breast, which can dry out on the grill.
Feed a crowd. Adjust the recipe to use smaller skewers and you can absolutely serve these as an appetizer for your next party or BBQ.
Tap off excess marinade. This is a pretty thick marinade so be sure to wipe off most of it before adding it to the grill. Excess will just lead to flare-ups on your grill and result in more char on your chicken.

¼ cup Once Again Crunchy Peanut Butter
- ½ cup light coconut milk (from 1-13.5 ounce can)
- 2 tablespoons yellow curry paste
- 2 tablespoons low sodium soy sauce
- 1 1/2 pounds boneless, skinless chicken breast, cut into 1 ¼-inch cubes
- 2 limes, quartered
- 1 cup fresh cilantro, roughly chopped
- ¼ cup salted peanut, roughly chopped
Directions
- In a large bowl combine peanut butter, coconut milk, curry paste and soy sauce. Remove a ¼ cup and reserve. Add the chicken to the bowl and stir to coat. Cover and marinate in the refrigerator for at least one hour and up to one day.
- When ready to cook, preheat grill to medium-high heat or set a grill pan over medium heat. Clean the grates then coat grates or pan with oil.
- Thread the chicken onto four 10-inch metal skewers, dividing evenly. Discard any remaining marinade. Season the skewers with salt and pepper.
- Remove any excess marinade and grill the chicken until cooked through (internal temperature reaches 165°F), turning once, about 8 to 10 minutes. Garnish with cilantro and peanuts and serve with extra sauce for dipping or drizzling.
